A recent publication highlighting the combined efforts of Nebraska Food for Health Center members- Drs. Amanda Ramer-Tait, Andy Benson, Tom Clemente, Ed Cahoon and their teams has been featured on the front cover of Molecular Nutrition & Food Research. This study describes the effects of stearidonic- enriched soybean oil on metabolic syndrome and obesity in a mouse model.
